Maize syrup as a colour filter

Maize syrup is illuminated from below with white light on a light table. Between the light table and the syrup is a polarising film that linearly polarises the light. A second, rotatable polarising film acts as an analyser and is positioned above the container. As the analyser is rotated, the colourless maize syrup appears in various vivid colours.
The sugar molecules in the maize syrup are chiral, making the syrup optically active. As the light passes through the syrup, the plane of polarisation is therefore rotated. The angle of rotation depends on the thickness of the layer traversed and on the wavelength of the light. The various spectral colours of the white light therefore emerge from the syrup with their planes of polarisation rotated by different angles.
Depending on its position, the analyser allows some wavelengths to pass through more strongly and others more weakly. The entire setup thus acts as a rotatable, adjustable, broadband colour filter; the colours arise from the altered spectral composition of the light and not from any colouring of the syrup.
